Dum Aalu Banane Ke Liye Aawashyak Samagari
- 8 Aalu ( madhyam aakar ke lijiye)
- Hari matar (1 Bowl)
- 2 Bade tamatar (Barik kate huye)
- 4 Piyaaj (Barik kata hua)
- Lahsun (8-10 Kaliyan)
- Aadarak (1 Chhota tukda)
- Hara mirchi (4 medium size ya swadistanusar)
- Hara Dhaniya (Sajawat ke liye)
- Tel (1 Tea-spoon)
- Namak ( Swadanusar)
- Jeera (1 Tea-spoon)
- Kasoori Methi (Apni ikhchhanusar)
- Kashmiri Laal Mirch (Apni ikhchhanusar)
- Teej Patta (Apni ikhchhanusar)
- Laal mirch Powder (1 Tea-spoon Ya Swadistanusar)
- Haldi Powder (1 Tea-spoon)
- Dhaniya Powder (2 Tea-spoon)
- Garam Masala (1 Tea-spoon)
- Dhudh ya fresh cream ya malayi (1 Chhota bowl)
Dum Aalu Banane ki Vidhi (दम आलू रेसिपी)
- Sabse pahle ek pan mein tel dal kar, jeera lahsun piyaaj ko halka sa laal hone par us mein matar dal kar fry kar le. Ek mixi mein jo aapne sabse pahle fry kiya tha usko pees le.
- Lahsun, adark aur hara mirchi ka aalag se pest bana le aur piyaaj, tamatar, hara dhaniya ka bhi aalag pest bana le. Aab aaluon ko chheel kar andar se khokhala karle, aur (saade) pani me dalte rahe, taki aalu kaale na pade. Isi tarah sabhi aalu ko chheel kar, use khokhala karle, aur (saade) pani mein daalte rahe, taki aalu kaale na ho jaye.
- Aab aap khokhale kiye huye aalu ko pan mein tel dale, aur unhe fry kar le, Isi tarah aap sabhi aalu ko fry kar le, jab tak acche se laal na ho jaye. Fry kiye huye aalu mein matar ka bana hua pest bhar de.
- Upar banaye huye lahsun, aadarak, hara mirchi ka bane huye pest ko bhi pan mein tel dal kar, use bhi fry kar le, ise bhi laal hone tak fry karte rahe. Aab aap piyaaj, tamatar aur hara dhaniya ke pest ko bhi pan mein tel dal kar, ise bhi fry kar le, laal hone tak fry karte rahe.
- Aab aap Gas ko ON kar le. Ek kadahi chadhaye aur usmein ek badi chhamach tel garam kare, fir usme jeera, teej patta, kasoori methi, kashmiri laal mirch ko fry kare. Aab aap bane huye lahsun, aadarak aur hara mirch ke pest aur piyaaj, tamatar, hara dhaniya ke pest ko bhi sath mein fry karle, aur dhudhya malayi dale, fir ismein Namak (swadanusar), Halidi Powder, Dhaniya Powder, Laal mirchi Powder dale. Ise ek chammach se chalate rahe aur pani dalte rahe, taki masala kadahi ko na pakde.
- Masale ke pak jane ke bad aap usmein fry kiye huye aalu ko, jo matar ke pest se bhar kar fry kiye the use masale mein dal de aur sath mein aap usmein garam masala dal de. Aur ise chammach se chalate rahe, taki aalu masala mein acchi tarah se mil jaye aur pani dalte rahe, taki masala kadahi ko na pakde. Aab ise 10-15 minute tak dhak kar rakh de.
- Aab aapki swadist aur majedar sabji tyar hai. Aap sajawat ke liye ke us par kata hua hara dhaniya dale ya dal sakte hai. Aap ise garma-garam chapati aur paratha ko apni family memebers ke sath kha kar is swadist aur majedar dum aalu ka aanand le sakte hain.
